Healthy Persian Love Cupcakes

This cupcake is called a Persian Love Cake, but for me it’s a traditional cake from my mum’s city she grew up in Yazd in Iran, hence it’s known as ‘Cake Yazdi’.

 Ingredients:

  • 2 cups spelt flour
  • 2 tablespoons of rosewater
  • 4 eggs
  • 1 teaspoon of cardamom
  • 1 teaspoon of baking powder
  • ½ cup olive oil or coconut oil
  • 1 cup natural yoghurt
  • 1 cup coconut sugar (I don’t like my love cupcakes too sweet, so you can add more if needed)
  • Sesame seeds or crushed pistachio

 Method:

  1. Add all the ingredients (except for the sesame seeds/crushed pistachio) in a bowl and mix until combined
  2. Oil some cupcake moulds and pour mixture into the mould direct or into cupcake wrappers
  3. Sprinkle sesame seeds or crushed pistachio on top as a garnish
  4. Bake in the oven for 170 degrees for 30 minutes or until cooked
