Middle Eastern Cauliflower Rice
Many people have steamed cauliflower pieces as a side with their dinner, but nowadays cauliflower has become an alternative for those who want to substitute it for rice. I decided to add a Middle Eastern twist to cauliflower rice and make it a tasty dish you can even eat by itself as a meal!
Ingredients:
- 1 cauliflower head
- 1 onion
- 2 garlic cloves
- 1 capsicum
- 2 tablespoons of chopped coriander
- 1 teaspoon of turmeric powder
- 1 teaspoon of cumin powder
- 1 teaspoon of coriander powder
- 1 teaspoon of sweet paprika
- 2 tablespoons of sesame seeds
- ¼ cup of sultanas (you can add more if your like)
Method:
- Grate the cauliflower to end up with a generous amount of rice sized pieces.
You could also use a food processor if you have a grating disc attachment on your food processor. The other option is to buy a packet of cauliflower rice at the supermarket - Heat a fry pan on the stove to low heat and pour olive oil in the pan
- Add the chopped onion to the pan, and once a little brown, add the chopped capsicum to the pan and mix until the capsicum has softened
- Add the two chopped garlic cloves into the pan and mix
- Add the turmeric, cumin powder, coriander powder and sweet paprika and mix
- Add the grated cauliflower to the pan and mix until it starts to brown. Add the chopped coriander and mix well before turning off the stove
- In a separate pan, fry the sesame seeds and sultanas in a little butter. You can substitute the butter for Coconut Oil if you are Vegan. If you would like a crunchy taste, you can add pumpkin seeds too (optional)
- Finally, pour the cauliflower rice and the sesame seed and sultana mixture into a bowl, mix and serve. You can add your own sides or eat by itself
